Summary:PURPOSE:To obtain a cuttlefish 'MISO' of delicate flavor having a unique flavor and aroma, by adding SAKE (Japanese rice wine) and 'MIRIN' (sweat SAKE), heating and converting the resultant blend with sesame oil into a pasty form. CONSTITUTION:Guts of a cuttlefish are used as a raw material and SAKE (Japanese rice wine) and 'MIRIN' (sweet SAKE) are added and kneaded therewith. On the other hand, a pan is heated and sesame oil in an amount of 50-60% based on the guts is poured therein. The above-mentioned guts are subsequently placed therein and converted into a pasty form to afford the aimed cuttlefish 'MISO'.
