Summary:PURPOSE:To efficiently produce Z-aspartame from Z-L-aspartic acid, by using a photocrosslinked polyvinyl alcohol, having specific functional groups and saponification degree and containing immobilized thermolysin. CONSTITUTION:Stilbazolium groups in an amount of 0.5-10mol%, preferably 0.8-4mol% are introduced into polyvinyl alcohol having >=80mol%, particularly >=85mol% saponification degree and preferably 1,000-2,000 polymerization degree to give photocrosslinkable polyvinyl alcohol. 10-50wt% thermolysin is added to an aqueous solution of the above-mentioned photocrosslinkable polyvinyl alcohol to provide a mixed solution, which is then molded into the form of a film or fiber, dried and irradiated with light to form a photocrosslinked material and afford an immobilized enzyme having preferably 10-50mum thickness or diameter of the molded article. The above-mentioned immobilized enzyme is capable of catalyzing condensation reaction of Z-L- aspartic acid with L-phenylalanine methyl ester and producing Z-aspartame.
