Summary:PURPOSE:A food, containing an acidic heteropolysaccharide AM-2 and having preventive effect on obesity. CONSTITUTION:A food containing an acidic heteropolysaccharide AM-2 containing glucose, rhamnose, mannose, glucuronic acid and acetyl groups as principal constituent components at 4:0.9-1.1:0.9-1.1:0.9-1.1 constituent saccharide ratio of the glucose:rhamnose:mannose:glucuronic acid and further 4-8% acetyl group content. About 0.1-2wt% food is preferably dissolved or mixed in a food and ingested. The amount thereof to be ingested is preferably about 1-20g for one adult a day. The acidic heteropolysaccharide AM-2 is obtained by cultivating Acetobacter MH-1597 (FERM-P No.280).
