Summary:PURPOSE:To produce and acidic heteropolysaccharide excellent in transparency, heat stability and viscosity, by adjusting the pH of a solution containing an acidic heteropolysaccharide of a specified composition to a value in a specified range. CONSTITUTION:A solution containing an acidic heteropolysaccharide having a sugar component ratio, glucose:galactose:mannose:glucuronic acid, of 10:3-6:0.5-2:0.5-2 is heated to room temperature-120 deg.C. The pH of this solution is adjusted to 0.5-2.5 by the addition of at least one acid selected from among inroganic acids such as sulfuric, hydrochloric and nitric acids and organic acids such as citric and malic acids. After diluting the resulting solution with a suitable amount of water, contaminants are removed from it by centrifugation, filtration or the like. A precipitate is obtained by adding an organic solvent or a quat. ammonium surfactant to the solution, and this precipitate is washed with an organic solvent and dried to obtain an acidic heteropolysaccharide.
