Summary: | PURPOSE:To obtain the titled seasoning having enriched good body inexpensively and efficiently, by extracting yeast suspension under heating at a specific temperature for specified time, removing an insoluble part to give an extracted solution, etc., and adding the extracted solution to a flavor component such as glutamic acid, a nucleic acid seasoning substance, etc. CONSTITUTION:Yeast suspension such as baker's yeast, etc. is extracted under heating at 55-100 deg.C for 1-60 minutes, and an insoluble component is removed. The yeast extract consisting of the prepared extracted solution and/or the concentrate of the extracted solution is blended with a flavor component selected from glutamic acid, its salt, and a nucleic acid seasoning substance, to give the aimed seasoning. |
