Summary: | PURPOSE:To exhibit improved modifying effect on rice by an economic method with improved safety, operability and maintenability, by using a treating tank of raw material rice and a separate electrolytic cell for generating reducing ions, and bringing a dipping solution of high electrolytic reducing ion concentration into contact with rice. CONSTITUTION:Raw material rice 2 and a dipping solution are placed in a treating tank 1, and an electrolytic cell 3 having an anode 8 inserted in the center thereof, a cathode 7 near the inner wall thereof and a cathode compartment 4 and an anode compartment 5 separated and formed by a diaphragm 6 is provided. The treating tank 1 is connected to the cathode compartment 4 with connecting pipes 9 such as pipeline, and a dipping solution is circulated through the treating tank 1 and cathode compartment 4 by a circulating means 10, such as a pump. An aqueous solution, e.g. water, a solution of an electrolytic substance or the dipping solution is partially passed through the anode compartment 5. In this state, a DC current is made to flow across both the electrodes 8 and 7 of the electrolytic cell 3 to reduce electrolytically the dipping solution in the cathode compartment 4. The dipping solution becomes an active reducing solution, and is brought into contact with the raw material rice in the treating tank 1 during circulation to carry out modification treatment. |
