Summary: | PURPOSE:In an enzymatic reaction wherein the enzymatic activity of substrate is reduced by a substrate, to carry out the enzymatic conversion of the substrate in high yield, by effecting the reaction in a two-phase system of a water phase and an organic solvent phase, suppressing substantially the substrate concentration low to <= the inhibition concentration. CONSTITUTION:In a reaction utilizing an enzyme wherein the enzymatic activity is lowered by a substrate, an organic solvent miscible with the substrate but not water, itself not causing the activity deterioration of the enzyme under reaction conditions, is added to an enzyme-containing solution, the substrate to reduce the enzymatic activity is almost dissolved in an organic solvent phase, and the substrate concentration in the water phase is substantially suppressed to <= the inhibition concentration by the partition coefficient of the substrate between the organic solvent phase and the water phase to carry out the reaction. |
