Summary: | PURPOSE:Coating for fry is prepared from wheat flour, edible fiber made from brans of cereals and beans to solve problems of conventional coating and obtain good effect. CONSTITUTION:Skins of maize, bran of wheat or barley or skins of soybean or other beans are treated chemically, physically or enzymatically to prepare edible fibers mainly consisting of cellulose and hemicellulose. The resultant fiber is combined with wheat flour so that it accounts for 1-30wt% based on the total weight. When needed, other additives may be added. The resultant coating gives fried food not oily but crispy texture. Further, increase in cholestrol is inhibited. |
