Summary: | PROBLEM TO BE SOLVED: To provide the manufacture of the alcohol kind and sweet food of high quality with excellent flavor for using Indic nonglutinous rice as a raw material, improving raw material utilization rate, reducing odd flavors intrinsic to the Indic nonglutinous rice and removing an odor. SOLUTION: In this method for manufacturing the alcohol kind and the sweet food, at least partially roasted Indic nonglutinous rice is used as the raw material. After a roasting processing is performed, the process of adding water or hot water and an enzyme agent and/ or malt and mixing and liquefying them is included. The malt obtained by malting the roasted Indic nonglutinous rice is used. |
