Summary: | PROBLEM TO BE SOLVED: To obtain ice cream, hard candies, firm noodles, Sakura Mochi (a bean jam cake with the flavor of cherry), Kuzukiri (arrowroot noodles), copying food of cuttlefish, etc., lures, etc., which are provided with a satisfactory eating feeling by containing a native gellan gum. SOLUTION: The native gellan gum being a high molecular polysaccharide of a microbiological origin obtained as a precursor before the deacylation processing of gellan gum being a polysaccharide comprising a constitution unit composed of 2mols. of glucose, one mol. of glucuronic acid and one mol. of rhamnose is contained by 0.01 to 0.2 pts.wt., preferably 0.02 to 0.1 pts.wt., per 100 pts.wt. final product such as the icecream. |
