Summary:PROBLEM TO BE SOLVED: To obtain a sugar ester high in emulsifiability and cleanability in high yield by dissolving partially hydrous maltitol and a low molecular-weight alcohol ester of a fatty acid of a specific number of carbon atoms in a solvent, heat-treating the solution at a specific temperature for a prescribed time and then reacting it. SOLUTION: In synthesizing a fatty acid ester of maltitol by reacting maltitol with a low molecular-weight alcohol ester of a 10-22C fatty acid (e.g. ethyl laurate) in a solvent, 10% or more of the raw material maltitol is hydrous maltitol, the raw material maltitol is dissolved in a reaction solvent (e.g. dimethylformamide, etc.) and heat-treated until the temperature reaches a temperature >=5 deg.C higher than the boiling point of water for >=16 minutes. The solution is maintained at 100 deg.C, reacted for 6 hours, cooled to a normal temperature, neutralized with diluted sulfuric acid and mixed with lauric acid as a fluidizing agent. The solvent is distilled away under reduced pressure. The resultant substance is incorporated with water to separate a lauric acid layer and a water phase is collected and extracted with diethyl ketone, the solvent after the extraction is distilled off and the resultant substance is purified by high-performance liquid chromatography to give the objective substance in high yield.
