Summary:PROBLEM TO BE SOLVED: To obtain a liquid composition containing γ-lactose having a peach-like sweet fragrance, useful as a food, a beverage, a perfume, etc., by culturing a fungus belonging to the genus Kluveromyces in a nitrogen-containing medium. SOLUTION: Malt is mixed with water, saccharified at 65 deg.C and filtered to prepare wort as a medium. A fungus belonging to the genus Kluveromyces [e.g. Kluveromyces lactis (IFO0648)] which is previously subjected to seed culture in wort is added to the medium and aerobically cultured at 30 deg.C for 24 hours by submerged culture. The cultured solution is mixed with a fermented unrefined alcoholic beverage prepared by mixing Saccharomyces cerevisiae and Lactobacillus casei with wort. Then the mixed solution is distilled by a still to give the objective liquid composition containing γ-lactone of the formula (e.g. γ- decalactone) useful as a food, a beverage, a perfume, etc.
