PURPOSE: To obtain an apple red pigment having various physiological actions especially antioxidant properties, ACE inhibition activities, histamine release inhibition action, GTase inhibition action, action of deodorizing malodorous substances and action of inhibiting the production of malodorous substances. CONSTITUTION: The apple red pigment is prepared by pressing and/or extracting the juice from apple fruits containing a red pigment in sarcocarps and/or pericarps and refining the fraction. An antioxidant, an antihypertensive agent, an antiallergic agent, an anticarious agent and a deodorant containing the fraction as the active ingrediaent are also provided.
