Summary:PURPOSE: To obtain a new yeast capable of remarkably facilitating the production of liquors or an alcohol by preventing contamination with wild bacteria, wild yeasts, etc. CONSTITUTION: This yeast is selected from Candida pintolopesii B-48-2, Candida fennica N-6-1 and Candida sp. A-31-2 (FERM P-1441) having antimicrobial activities against bacteria.
