Summary:PURPOSE:To produce high-purity nystose (tetrose) from a mixed solution of fructooligosaccharide. CONSTITUTION:A process for separating a mixed solution of fructooligosaccharide (mixed solution of monosaccharide to hexose) into a component rich in nystose, a tetrose and components except the component by liquid chromatography is combined with a process for cooling the component rich nystose in to crystallize and separate nystose by taking advantage of specificity of solubility of nystose. A simulated moving bed type liquid chromatography separating device is preferably used as a liquid chromatography separating device.
