PURPOSE:To facilitate the temperature regulation of a pressurizing chamber and enhance the durability of a high-pressure part in a large-sized food processing machine. CONSTITUTION:In a food processing machine, this apparatus for pressurizing a food is equipped with a pressurizing container 1, provided with a jacket 2 and openably and closably connected to a thermostatic heating medium circulating system 5 capable of circulating a low-pressure thermostatic heating medium through the jacket 2, a high-pressure feeding system 9 for a hydraulic medium at ordinary temperature capable of feeding and pressurizing the hydraulic medium at ordinary temperature to a treating chamber 3 in the pressurizing container 1, a thermostatic heating medium circulating system 20 capable of circulating the low-pressure thermostatic heating medium through the treating chamber 3 of the pressurizing container 1 in combination with the feeding of the hydraulic medium to a feed pipeline 12 of the high-pressure feeding system 9 for the hydraulic medium at ordinary temperature. The temperatures of the jacket 2 and the pressurizing container 1 are kept proper with the thermostatic heating medium circulating systems 5 and 20. The thermostatic heating medium circulating system 20 is then closed to operate a high-pressure pump 13. Thereby, the interior of the pressurizing container 1 is pressurized.
