Summary: | PURPOSE:To provide a dried food composed of the lean meat of beef shavable to various shaven forms, exhibiting beautiful color and having the best taste and flavor characteristic to beef and to provide its shaven food and their preparation process. CONSTITUTION:Lean meat 1 of beef having uniform meat fiber direction and absolutely or almost free from fat tissue 2 in the meat is used as a starting raw material to prepare a dried beef meat 1a having a water-content of <=23% and a water activity of <=0.86 at the surface part and the core part of the lean meat 1. A dried and shaven beef meat 1b is produced by shaving the dried beef meat 1a at normal temperature with a dried bonito plane 10 for domestic use or business use. The present invention also relates to the process for the preparation of the foods. |
