Summary:PURPOSE:To provide a heating and cooking device capable of preventing scorch without being influenced by the material of a pan or the heating power. CONSTITUTION:An A/D converter 8 of a signal processing device 7 performs an A/D conversion of a temperature sensing signal of a temperature sensor 6. A control judgement part 9 judges it as a boiling state when the sensed temperature of the temperature sensor 6 is saturated to a specified temperature. A time in which the sensing temperature of the temperature sensor 6 passes through each of temperature intervals set by the specified temperature interval from a temperature slightly higher than a temperature at the boiling state toward its increasing temperature direction is measured, and if the number of temperature interval in which the measured time is shorter than the specified time becomes 3, a control signal for stopping the supply of gas is given to a gas supplying control device 3.
