Summary: | PURPOSE:To process low-quality meat into meat having soft and juicy feelings and obtain the subject processed product having high value added by injecting an injecting liquid consisting of a water-in-oil type emulsion of an extract of kiwi fruit and edible oil and fat into meat. CONSTITUTION:A injecting liquid obtained by blending a water-in-oil type emulsion (obtained by using edible oil and fat such as corn oil or rapeseed oil and water at a weight ratio of (65:35) to (40:60) and emulsifying the mixture with casein sodium and egg yolk, etc.) of kiwi fruit extract (containing a proteolytic enzyme of 1000-1500mug/ml) and edible oil and fat at a weight ratio of 1: (1 to 100) [preferably 1:(10 to 50)] is injected into meat to provide the objective processed product. |
