Summary:PURPOSE:To improve the decomposition performance of an immobilized lipase in the hydrolysis of an oily substance using a multistage reactor, by carrying out the mixing and separation, etc., keeping the temperature above a specific level and supplying the oily substance and a water-soluble substance at different feeding rates. CONSTITUTION:The hydrolyzing apparatus is composed of reactors 1A, 1B, 1C and attached separation tanks 2A, 2B, 2C. Each reaction tank is furnished with a screen 3 and a stirrer 4. An oily substance 5 is supplied to the tank 1A and a water-soluble substance 6 is supplied to the tank 1C. The oily substance is made to countercurrently contact with the water-soluble substance in a manner that the average feeding rate of the oily substance becomes higher than that of the water-soluble substance. An immobilized lipase 7 is put into each reaction tank beforehand. The substances are mixed at >=50 deg.C, separated by the screen 3 and separated into the oily substance and the water-soluble substance by a separation tank. The upper layer of the tank 2C is taken out as an oily product 8 and the lower layer of the tank 2A is taken out as a water-soluble product 9.
