Summary: | PURPOSE:To obtain an instant tonic liquor having excellent taste and flavor and preservable over a long period by dehydrating, drying and pulverizing genital organ of fish or shellfish. CONSTITUTION:Genital organ of fish or shellfish is dehydrated, dried and pulverized and the powder is used as the objective instant liquor optionally by putting in a liquid-permeable small pouch. The dehydration and drying process is preferably carried out by immersing the genital organ of fish or shellfish in hot water for a short time to sterilize the surface and remove disagreeable smell. The genital organ is dehydrated and dried as it is or after taking out the content by breaking the thin surface membrane and, if necessary, pulverized with a crusher. The instant tonic liquor prepared by the above process is heated together with SAKE (Japanese rice wine) in the form of powder or in a state put into a bag made of a liquid-permeable material or it is put into a heated SAKE to leach the component, taste and flavor of the genital organ such as soft roe into SAKE. |
