CONSTITUTION:A pickling bed prepared by admixing malted rice or malt with flavored kelp is pickled with separately flavored scallions followed by aging, thus obtaining the objective food. Alternatively, flavored kelp is pickled in malted rice or malt and aged; or dried fish flesh, heating-cooked fish flesh, heating-coked meat, fumigated meat or edible mushroom is pickled, together with a flavor, in malted rice or malt and aged.
