Summary:PURPOSE:To obtain a green tea-canned article with sufficiently good taste and fragrance of green tea, by spiking a green tea-extracted solution with cyclodextrin followed by packing the resultant solution in a can and then heating treatment with tight winding to eliminate retort odor as the offensive odor. CONSTITUTION:alpha, beta, or gamma-cyclodextrin is dissolved in a green tea (e.g., Japanese steeped green tea, 'gyokuro' (green tea of the finest quality)-extracted solution in the volume of 0.01-0.15% per volume of the beverage and the resultant solution is warmed again followed by packing in a can and the upper space on the liquid layer in the can is replaced by nitrogen gas followed by tightly winding the can and performing sterilization by heating, thus eliminating retort odor.
