Summary:PURPOSE:To obtain the title soybean having low trypsin inhibitor activity and reduced in raffinose and stachyose content by dispersing a soybean material brought into contact with a specific aqueous solvent in water and heating the material. CONSTITUTION:A soybean material (e.g. defatted soybean) is, as necessary, powdered and an acidic solution 5-20 times as much as the soybean material and, as necessary, an acid are added thereto and the powder is then extracted into the acidic solution at 30-100 deg.C for 10min to 10hr while keeping the pH of the solution to nearly isoelectric point (4.2-4.8),and the soybean material is separated from the extracted solution. Then the soybean material is dispersed in water 5-20 times as much as the soybean material and retained at 90-110 deg.C for 30-180min and dried to provide the processed soybean for animal feed having <=3mg trypsin inhibitor activity based on 1g protein and <=0.1% total amount of raffinose and stachyose.
