Summary:To provide a multilayer beverage and a production method for the same.SOLUTION: There is provided a multilayer beverage which has a first layer and a second layer provided on a top surface of the first layer and includes a water insoluble component and a cellulose composite body, and has a passage ratio of 90 mass% or more when the multilayer beverage is poured to a sieve whose aperture is 1 mm. There is also provided a production method for the multilayer beverage which has a first layer and a second layer provided on a top surface of the first layer, the production method comprises: a mixing step of mixing a water insoluble component, a cellulose composite body and a dispersant, for preparing beverage liquid; a filling step of filling a container with the beverage liquid; and a standing step of allowing the container which is filled with the beverage liquid to stand at 5°C or lower, where the cellulose composite body is configured so that, a zeta potential of aqueous dispersion liquid including 0.01 mass% or more of the cellulose composite body and having pH of 6-7 is -76 mV or more and -57 mV or less.SELECTED DRAWING: None 【課題】多層飲料及びその製造方法の提供。【解決手段】第一層と、前記第一層の上面にある第二層と、を有する多層飲料であって、水不溶性成分及びセルロース複合体を含有し、前記多層飲料を、目開き1mmの篩に注いだ場合の通過率が90質量%以上である、多層飲料、及び、第一層と、前記第一層の上面にある第二層と、を有する多層飲料の製造方法であって、水不溶性成分、セルロース複合体、及び分散媒を混合して、飲料液を調製する混合工程と、前記飲料液を容器に充填する充填工程と、前記飲料液を充填した容器を、5℃以下で静置する静置工程と、を有し、前記セルロース複合体は、当該セルロース複合体を0.01質量%含有するpH6~7の水分散液のゼータ電位が、-76mV以上-57mV以下である、多層飲料の製造方法。【選択図】なし
