The forming method includes steps of: forming an end piece (DD) by forming slits (DC) in both sides of band-shaped food dough (D) in a conveyance direction, the slits being inclined with respect to a width direction; erecting the end pieces (DD) from a proximal end portion (DF) and guiding the end pieces (DD) from the inside by guiding members (45L, 45R); and folding the end pieces (DD) inward and making the end pieces (DD) in both sides overlap over a proximal portion (DB) of the band-shaped food dough (D) alternately with each other.SELECTED DRAWING: Figure 1 【課題】本発明は、外観の整った編み折り模様を有する積層食品を安定して成形することのできる成形方法および成形装置の提供を目的とする。【解決手段】編み折り模様を有する積層食品(DS)の成形方法であって、帯状食品生地(D)の搬送方向両側に幅方向に対し傾斜する切れ込み(DC)を入れて端片(DD)を形成する工程と、前記端片(DD)を基端部(DF)から立ち上げて案内部材(45L、45R)で内側から案内する工程と、前記端片(DD)を内側へ折り曲げ、両側の前記端片(DD)を前記帯状食品生地(D)の基部(DB)上に交互に重ね合わせる工程と、を含むことを特徴とする。【選択図】図1
