To provide a salmonid cultivation system and cultivation method, capable of preventing early death and meat degradation from being caused by sexual maturation while promoting growth rates of fry.SOLUTION: A salmonid cultivation system includes: a light irradiation unit for emitting irradiation light toward salmonids in a water tank; and a light irradiation control unit for controlling the light irradiation unit so as to emit the irradiation light having a peak wavelength that is selected/controlled on the basis of a light efficiency spectrum being absorption efficiency of the salmonids for each wavelength band of the irradiation light, obtained on the basis of an arbitrary light emission spectrum of the light irradiation unit and a light receiving spectrum of the salmonids.SELECTED DRAWING: Figure 1 【課題】稚魚の成長速度を増進しつつ、性成熟による早期の死亡や身の劣化を防止することができる鮭鱒類の養殖システム及び養殖方法を提供する。【解決手段】水槽内の鮭鱒類に向けて照射光を発する光照射部と、任意の前記光照射部の発光スペクトルと前記鮭鱒類の光受容スペクトルに基づいて得られる、前記照射光の波長帯毎の前記鮭鱒類の吸収効率である光効率スペクトルに基づいてピーク波長が選定・制御された前記照射光を発するように前記光照射部を制御する光照射制御部と、を有することを特徴とする鮭鱒類の養殖システム。【選択図】図１
