Summary:To provide a cutting/recovery device of a remaining sheet in a jiao-zi molding machine capable of reducing production cost by reusing the remaining sheet of a jiao-zi sheet and maintaining the product quality by curbing deterioration of a texture and a taste due to the remaining sheet.SOLUTION: A jiao-zi molding machine P obtains jiao-zi G by compressing a half-kneaded noodle sheet raw material F to mold it into a belt shape, cutting out the obtained belt-like material in a predetermined shape to make a jiao-zi sheet M, and wrapping a jiao-zi filling g with the jiao-zi sheet. The jiao-zi molding machine comprises: a cutting section 1 that consecutively cuts a belt-like remaining sheet N after the cut-out into a remaining sheet piece N1 having a predetermined length via a conveying section 6; a supply section 2 that supplies the half-kneaded noodle sheet raw material F, into which the remaining sheet piece N1 cut in the cutting section 1 is supplied by being dropped continuously; and a noodle belt forming section 3 that compresses the remaining sheet piece and the noodle sheet raw material that are blended in the supply section to make a new noodle belt W of one layer structure.SELECTED DRAWING: Figure 1 【課題】餃子皮の残皮を再利用して製造コストを低下させることができるとともに、当該残皮による食感、食味の低下を抑制して品質を維持することができるようにした餃子成形機における残皮の切断還元装置を提供する。【解決手段】半練り状の麺皮原料Fを圧縮して帯状に成形し、得られた帯状の材料を所定形状に型抜きして餃子皮Mとし、餃子皮に餃子の具gを包んで餃子Gを得る餃子成形機Pにおいて、前記型抜き後の帯状残皮Nを送り部6を経て所定長の残皮片N1に順次切断する切断部1と、該切断部1で切断された残皮片N1が連続して落下して供給される半練り状の麺皮原料Fとの供給部2と、前記供給部内において混合された前記残皮片及び麺皮原料を圧縮し一層構造の新麺帯Wとする麺帯成形部3とを具備してなる。【選択図】図1
