Summary: | To provide a production method of a coffee composition which can easily produce the coffee composition having an appropriate concentration and a good flavor.SOLUTION: A production method of a coffee composition comprises the steps of: (1) preparing a coffee extract from a ground product of a raw coffee bean; (2) preparing a coffee extract from a ground product of a roasted coffee bean; (3) mixing the coffee extract obtained in the step (1) and the coffee extract obtained in the step (2) so as to be the coffee extract obtained in the step (1): the coffee extract obtained in the step (2)=10:90 to 75:25 at mass ratio; and (4) performing heating treatment to a coffee mixture obtained in the step (3). The heating treatment is performed so as to satisfy 111≤T≤130 and t≥-0.7895×T+103.6 where a heating temperature is T[°C] and a heating time is t[min].SELECTED DRAWING: Figure 4
