Summary: | To provide a water-in-oil type plastic fat composition which does not require addition of ester exchange oil, and even when amounts of trans fatty acid and saturated fatty acid are reduced, oil-off hardly occurs, and achieves a melt-in-the-mouth feeling similar to conventional ones while achieving heat shock resistance.SOLUTION: There is provided a water-in-oil type plastic fat composition including wax, an oil phase in the composition is 15-85 mass%, and a wax content is 0.01-5 mass%.EFFECT: As an effect, by containing a prescribed amount of the wax content, network formation of the fat is made firm, therefore oil off is suppressed, and a melt-in-the-mouth feeling similar to conventional ones can be achieved while achieving heat shock resistance.SELECTED DRAWING: Figure 1
【課題】エステル交換油の添加を必須とせず、トランス脂肪酸と飽和脂肪酸を低減化した場合であっても、オイルオフが生じにくくヒートショック耐性を有しながらも、従来と遜色ないくち溶け感を有する油中水型可塑性油脂組成物の提供。【解決手段】ワックスを含有する油中水型可塑性油脂組成物であって、該組成物中の油相が15~85重量%であり、かつ、ワックス含有量が0.01~5重量%である、油中水型可塑性油脂組成物。【効果】所定量のワックス成分を含有させることにより油脂のネットワーク形成を強固にすることで、オイルオフが生じにくくヒートショック耐性を有しながらも、従来と遜色ないくち溶け感を有する油中水型可塑性油脂組成物を提供できる。【選択図】図1 |
