Summary:To provide: an umami-taste enhancement agent that can enhance the umami-taste using the favorable natural flavor which a food/beverage possesses as a base; a composition containing said umami-taste enhancement agent; a method for enhancing the umami-taste of a food/beverage by adding said umami-taste enhancement agent to food/beverage; and a method for improving deliciousness.SOLUTION: By adding a minute amount of 7-dodecenoic acid, 8-dodecenoic acid, 9-dodecenoic acid or 10-dodecenoic acid to a food/beverage, the umami-taste of the food/beverage can be enhanced and the flavor of the food/beverage can be improved without imparting the aroma and flavor that are unnecessary to the food/beverage.SELECTED DRAWING: None 【課題】飲食品が有している好ましい自然な香味をベースに、旨味を増強することができる旨味増強剤、および当該旨味増強剤を含有する組成物、ならびに、飲食品に当該旨味増強剤を添加することにより飲食品の旨味を増強する方法、ならびに、おいしさを改善する方法を提供する。【解決手段】7−ドデセン酸、8−ドデセン酸、9−ドデセン酸または10−ドデセン酸を、飲食品に微量添加することにより、これらの飲食品に不必要な香気・香味を付与することなく、飲食品の旨味を増強し、飲食品の風味を改善ができる。【選択図】なし
