Summary:To provide methods for extracting high purity mannose quite easily by conducting two step hydrolytic treatment of vegetable materials.SOLUTION: Disclosed herein is a method for extracting mannose from a vegetable material comprising: a first hydrolysis step S1 where a vegetable material M1 and a first acid catalyst A1 being a weak acid or diluted strong acid are mixed and heated; a separation step S2 where a reaction product M2 obtained by the first hydrolysis step S1 is separated and recovered; and a second hydrolysis step S3 where the reaction product obtained by the separation step is mixed with a second acid catalyst S2 being a weak acid, diluted strong acid, strong acid or solid acid and heated.SELECTED DRAWING: Figure 1 【課題】植物系原料に、植物系原料に対して2段階の加水分解処理を施すことによって、極めて容易に高純度のマンノースを抽出可能とするマンノース抽出方法を提供する。【解決手段】植物系原料M1と弱酸又は希釈強酸の第1酸触媒A1とが混合され加熱される第1加水分解工程S1と、第1加水分解工程により得られた反応生成物M2が分離回収される分離工程S2と、分離工程により得られた反応生成物と弱酸、希釈強酸、強酸又は固体酸の第2酸触媒A2とが混合され加熱される第2加水分解工程S3とを経ることによって植物系原料中よりマンノースを抽出する。【選択図】図1
