Summary: | To efficiently change over without manual aid the choice of cartilage adhered to the unboned meat for leaving in the bone part or for cutting off from the bone part together with the meat.SOLUTION: The cartilage cutter of unboned meat in one embodiment is equipped with a cutting blade which is provided in the transportation path of unboned meat, and with an elastic support part which is for elastically supporting the cutting blade in a manner that the cutting blade can recede by a reactive force imparted to the cutting blade at the time of cutting the unboned meat. The elastic support part is constituted so that the changeover is possible between a first elastic support force in which the elastic support force of the elastic support part can cut the cartilage adhered to the bone part of the unboned meat and a second elastic support force in which the force is smaller than the first elastic support force, with no cartilage cut.SELECTED DRAWING: Figure 1
