PROBLEM TO BE SOLVED: To provide a rounding method and rounding machine of food dough which is able to form a food dough with smooth surface and without damaging the food dough.SOLUTION: A conveying device 9 for conveying the food dough 7 and a pair of molded plates 11 and 13 arranged to extend along the conveying direction R of the conveying device on the upper surface of the conveying device. The molded plates have opposing inclined surfaces 18B and 22B. These inclined surfaces are inclined outward from the lower side to the upper side so that the interval therebetween is narrower on the lower side and wider on the upper side, and the pair of molded plates are moved in the relatively opposite direction along the longitudinal direction, and is a rounding molding apparatus for rolling a food dough provided with a driving mechanism relatively moving toward and away from each other along a width direction perpendicular to the longitudinal direction. And a food dough pressing member 15 which moves vertically between a pair of formed plates. The food dough pressing member descends when the molded plates are separated from each other between the molded plates, and rises when the molded plates approach each other.SELECTED DRAWING: Figure 3 【課題】食品生地をほとんど損傷させることなく、その表面に張りのある表皮を形成して食品生地を丸め成形することができる食品生地の丸め成形装置及び丸め成形方法を提供する。【解決手段】食品生地７を搬送する搬送装置９と、搬送装置の上面にて搬送装置の搬送方向Ｒに沿って延在して配置される一対の成形板１１，１３を備え、成形板は対向する傾斜面１８Ｂ，２２Ｂを有し、これら傾斜面は、その間の間隔が下側は狭く上側が広くなるよう下側から上側に向かって外方向に傾斜する構成であり、一対の成形板をその長手方向に沿って相対的に反対方向に移動し、長手方向に垂直な幅方向に沿って相対的に接近離反する駆動機構を備えた食品生地を丸める丸め成形装置であって、一対の成形板の間で上下動する生地押さえ部材１５を備え、生地押さえ部材は、成形板の間で成形板が互いに離反する際に下降し、成形板が互いに接近する際に上昇する。【選択図】図３
