Summary:PROBLEM TO BE SOLVED: To provide a method of screening which can accurately assess the productivity of an antibacterial substance by lactic acid bacteria and search for lactic acid bacteria with high antibacterial substance productivity.SOLUTION: In a vessel 1, after solidifying a mixed agar medium 2 of a mixture of lactic acid bacteria and a sensitive bacteria having sensitivity to a specific antibacterial substance, a neutralizer-added agar medium 3 to which a neutralizer is added is layered thereon and in a solidified state thereof culturing is performed for a prescribed time period. The lactic acid produced by the lactic acid bacteria is neutralized by the neutralizer and as the increase in lactic acid concentration of the mixed agar medium 2 is suppressed, growth inhibition of lactic acid bacteria due to a reduction in pH is suppressed. By not impeding the growth of lactic acid bacterial colonies, the productivity of the antibacterial substance can be accurately assessed.SELECTED DRAWING: Figure 1 【課題】乳酸菌による抗菌物質の産生能を精度良く評価でき、抗菌物質の産生能が高い乳酸菌を探索できるスクリーニング方法を提供する。【解決手段】容器1内に、乳酸菌と、特定の抗菌物質に対して感受性を有する感受性菌とを混釈した混釈寒天培地2を固化させた後、中和剤を添加した中和剤添加寒天培地3を重層して固化させた状態で所定時間の培養を行う。乳酸菌によって産生される乳酸は中和剤によって中和され、混釈寒天培地2の乳酸濃度の上昇が抑制されるため、pH低下による乳酸菌の増殖阻害が抑制される。乳酸菌のコロニーの成長が阻害されないことにより、抗菌物質の産生能を精度良く評価することができる。【選択図】図1
