Summary:PROBLEM TO BE SOLVED: To provide a processed spice containing fenugreek, to which sweetness, a pungent strong smell with fragrance and deepness are imparted, and also, the other spices have preferable flavor, and a method for producing the same.SOLUTION: Provided is a processed spice comprising two or more kinds of spices including processed fenugreek prepared by subjecting (a) un-pulverized fenugreek to heating treatment, performing pulverization treatment, and next subjecting the same to aging treatment in a sealed container, where the sealed container is composed of material having an oxygen permeability of 1,500 fmol/m/s/Pa or lower, and (b) the other spice other than the fenugreek prepared separately from the (a); where the aging treatment for the fenugreek being the treatment performed at 50 to below 80°C for 3 to 7 weeks.SELECTED DRAWING: None 【課題】フェヌグリークを含む加工香辛料において、甘さと香ばしさのある鼻を突き刺すような強い香りとコクが付与され、かつ他の香辛料が好ましい風味を有する加工香辛料及びその製造方法の提供。【解決手段】2種以上の香辛料を含有する加工香辛料であって、(a)未粉砕のフェヌグリークを加熱処理し、粉砕処理し、次いで密閉容器中で熟成処理して調製された加工フェヌグリークと、ここで前記密閉容器は1500fmol/m2/s/Pa以下の酸素透過度を有する材料で構成されており、(b)(a)とは別に用意されたフェヌグリーク以外の他の香辛料とを含む加工香辛料。前記フェヌグリークの熟成処理が50〜80℃未満で3〜7週間の処理である加工香辛料。【選択図】なし
