Summary: | PROBLEM TO BE SOLVED: To provide a method for screening a compound that enhances carbonation feeling, a carbonation feeling enhancer, and drinks and foods in which carbonation feeling is enhanced by a carbonation feeling enhancer.SOLUTION: There is provided a screening method a compound that enhances carbonation feeling includes: bringing a compound to be tested into contact with a trigeminal nerve or a cell derived from the trigeminal nerve in carbonic water; detecting physiological response of the trigeminal nerve or the cell derived from the trigeminal nerve which is generated by the contact; and selecting a compound that enhances carbonation feeling by using the fact that the intensity of physiological response when a compound to be tested exists is increased higher than the intensity of physiological response when a compound to be tested does not exist as an indicator. 【課題】本発明は、炭酸感を増強させる化合物をスクリーニングする方法および炭酸感増強剤並びに炭酸感増強剤により炭酸感を増強した飲食品を提供する。【解決手段】炭酸感を増強する化合物のスクリーニング方法であって、被検化合物を炭酸水中で三叉神経または三叉神経由来の細胞と接触させることと、上記接触により発生する三叉神経または三叉神経由来の細胞の生理学的応答を検出することと、被検化合物存在時の生理学的応答の強度が、被検化合物非存在時の生理学的応答の強度よりも高まることを指標として炭酸感を増強する化合物を選択することとを含む、スクリーニング方法および炭酸感増強剤並びに炭酸感増強剤により炭酸感を増強した飲食品。【選択図】なし |
