Summary:PROBLEM TO BE SOLVED: To provide a novel W/O/W type emulsion for stabilizing piceatannol which is contained in passion fruit seed extract, has ultraviolet damage effect and MMP-2 inhibiting action, and has a strong acid region at pH 2.0 or less or is unstable at pH 5.0 or more, and to provide a production method thereof.SOLUTION: The invention provides a W/O/W type emulsion comprising an internal aqueous phase containing polyphenol, such as piceatannol, an oil phase surrounding the internal aqueous phase, and an external aqueous phase surrounding the oil phase; wherein a first closed endoplasmic reticulum formed by a first amphiphile, such as triolein acid penta glyceryl, intervenes in an interface of the internal aqueous phase and the oil phase, and particles of polycondensation polymer having a second closed endoplasmic reticulum formed by a second amphiphile, or a hydroxyl group intervenes in the external interface of the oil phase and the external aqueous phase.SELECTED DRAWING: None 【課題】パッションフルーツの種子抽出物に含まれ、紫外線ダメージ効果やMMP−2の阻害作用を持つピセアタンノールがpH2.0以下で強酸性領域若しくは5.0以上で不安定であるため、安定化するための新規なW/O/W型エマルション及びその製造方法の提供。【解決手段】ピセアタンノール等のポリフェノールを含有する内水相と、内水相を囲繞する油相と、油相を囲繞する外水相と、を含んで構成され、内水相と油相の界面にトリオレイン酸ペンタグリセリル等の第1の両親媒性物質によって形成される第1の閉鎖小胞体が介在し、油相と外水相の外界面に第2の両親媒性物質によって形成される第2の閉鎖小胞体または水酸基を有する重縮合ポリマーの粒子が介在する、W/O/W型エマルション。【選択図】なし
