Summary:PROBLEM TO BE SOLVED: To provide a production method of a dried fish in which the variations of an inosinic acid (IMP) content of the dried fish are suppressed and the dried fish having the IMP content to be targeted can be produced in higher probability and efficiently.SOLUTION: A production method is provided for producing a dried fish in which the fish caught is cryopreserved, boiled and ripened after thawing, and then smoked and dried. The frozen fish is stored at -60°C to -20°C after being caught and subjected to brine freezing in a ship. The frozen fish within X days is calculated from the equation (1): Y≤-1.6X+1027, the equation (2): Y≤-1.5X+875, or the equation (3): Y≤-1.5X+810, when the storage days are 60 days or less and the IMP content is Y, and the days stored at -60°C to -20°C after being landed is X.
