Summary: | PROBLEM TO BE SOLVED: To provide a technique that enables fresh use by a simple method.SOLUTION: A production method of a hard-shell clam removed of acridity has a step of taking out a living hard-shell clam from seawater, and imparting a drying stress or a freshwater stress to the hard-shell clam, and a step of returning the hard-shell clam to the seawater and breeding it at 5°C or less for two weeks or more. After breeding the hard-shell clam by the production method, the hard-shell clam is immersed in the heated freshwater or seawater for a constant period of time, and thereby the hard-shell clam comes to open a shell while being alive, and the flesh and adductor muscle enabling fresh use can be taken out by hand easily.SELECTED DRAWING: Figure 1
【課題】簡易な方法で生鮮利用が可能となる技術を提供する。【解決手段】海水から生きているビノスガイを取り出し、ビノスガイに干出ストレス又は淡水ストレスを付与する工程と、海水にビノスガイを戻し、5℃以下で2週間以上飼育する工程と、を有する、エグ味が除去されたビノスガイの生産方法により飼育した後で、ビノスガイを加熱された淡水または海水に一定時間浸漬させることで生きたままの状態で貝殻を開くようになり、手で簡単に生鮮利用可能な見及び貝柱を取り出すことが出来る。【選択図】図1 |
