Summary: | PROBLEM TO BE SOLVED: To provide a dressing which maintains the texture of vegetables contained in a salad or the like and improves the flavor of a flavored oil.SOLUTION: The dressing contains a polyglycerol condensed ricinoleic acid ester and a flavored oil. The dressing contains 0.05 mass% or more and 3 mass% or less of the polyglycerol condensed ricinoleic acid ester relative to the flavored oil and preferably contains an emulsifier with an HLB of 1 to 9 (except for polyglycerol condensed ricinoleic acid ester).
【課題】サラダ等に含まれる野菜の食感を維持し、さらに、風味油の風味を向上するドレッシングを提供する。【解決手段】ポリグリセリン縮合リシノレイン酸エステルおよび風味油を含有するドレッシングであって、風味油に対し前記ポリグリセリン縮合リシノレイン酸エステルを0.05質量%以上3質量%以下含有する前記ドレッシングであり、HLB 1〜9の乳化剤(ポリグリセリン縮合リシノレイン酸エステルを除く)を含有することが好ましい。【選択図】なし |
