PROBLEM TO BE SOLVED: To provide a fermenter capable of maintaining fermentation environment easily over a long time, even if it is small.SOLUTION: A fermenter comprises: a case 2 for storing a material to be fermented; a heater 70 for acting as a heat source in the case 2; a water storage part 3 heated by the heater 70 for keeping the moisture in the internal space of the case 2 at a predetermined value; and a dew condensation water flowing part for flowing the dew condensation water of said steam to be produced on the inner side of the wall face of the case 2, to flow the dew condensation water toward the water storage part 3. 【課題】 小型であっても長時間に渡って発酵環境を容易に維持できる発酵器を提供する。【解決手段】 被発酵物が格納されるケース２と、ケース２内の熱源となるヒーター７０と、ヒーター７０により加熱されケース２の内部空間の湿度を所定の値で維持する水蒸気となる水を貯める貯水部３と、を有し、ケース２の壁面内側において生じる上記水蒸気の結露水を、貯水部３に向けて流動させる結露水流動部を有する、ことを特徴とする発酵器による。【選択図】図４
