Summary: | PROBLEM TO BE SOLVED: To provide an oil and fat composition with high diacylglycerol content and an excellent flavor.SOLUTION: The oil and fat composition has the content (ppm) of MCPD-FS measured according to the German Society for Fat Science (DGF) standard method C-III 18(09) of 13 ppm or less and the content of diacylglycerol of 25 mass% or more, and is subjected to a decoloration process in which it is brought into contact with adsorbent selected from active carbon, silicon dioxide and solid acid adsorbent, and a deodorization treatment for the deodorization time of 5-110 minutes at the deodorization temperature of 120-205°C.
【課題】ジアシルグリセロール含量が高く、より風味の優れた油脂組成物の提供。【解決手段】ドイツ脂質科学会(DGF)標準法C−III 18(09)にて測定されるMCPD−FSの含有量(ppm)が13ppm以下、ジアシルグリセロールの含有量が25質量%以上であり、かつ、活性炭、二酸化ケイ素及び固体酸吸着剤から選択される吸着剤と接触させる脱色工程、及び、脱臭温度120〜205℃で脱臭時間5〜110分間の脱臭処理を施した油脂組成物。【選択図】なし |
