Summary:PROBLEM TO BE SOLVED: To provide a method for producing frozen fried-foods for facility cooking capable of heat-cooking a large quantities of food numbers in large quantity cooking facilities in a bulk, hard to be damaged during heating, and having a preferable texture, and frozen fried-foods for facility cooking.SOLUTION: As inside ingredients, solid foods subjected to alkalization treatment using a pH-adjusted alkali aqueous solution are prepared, as coating material raw materials, a mixture including a plural kinds of saccharide having one or more properties selected from the group consisting of thickening properties, foam formability, foam stability, pH stability, oil cuttability, water separation preventability, sagging preventability, salt resistance, enzyme resistance and heat resistance is prepared, the coating material raw materials are stuck to the surfaces of the inside ingredients to produce prearrangement products, the prearrangement products are oil-prepared to form the coating material raw materials into coating materials having brittleness, glossiness, sticking properties, oil cuttability, non-thread forming properties and freezing resistance, fried-foods in which the inside ingredients are covered with the coating materials are produced, the fried-foods are frozen, and the frozen fried-foods are packaged with packaging materials for frozen fried-foods. 【課題】大量調理施設において多量の食数を一括して加熱調理することができ、加熱中に損傷を受け難く、好ましい食感を有する施設調理用冷凍揚物の製造方法及び施設調理用冷凍揚物を提供する。【解決手段】中具として、pH調整されたアルカリ水溶液を用いてアルカリ化処理した固形食品を準備し、衣材原料として、増粘性、泡沫生成性、泡沫安定性、pH安定性、油切れ性、離水防止性、だれ防止性、耐酸性、耐塩性、耐酵素性および耐熱性からなる群より選択される1又は2以上の性質を有する異なる複数種の糖類を含む混合物を準備し、中具の表面に衣材原料を付着させ、これにより下拵え品を作製し、下拵え品を油ちょうし、これにより前記衣材原料を脆性、光沢性、付着性、油切れ性、非糸曳き性および冷凍耐性を有する衣材とし、該衣材により前記中具が覆われた揚物を作製し、揚物を冷凍し、冷凍した揚物を冷凍揚物用包装材により包装する。【選択図】 なし
