Summary: | PROBLEM TO BE SOLVED: To provide an aseptic rice which is excellent in eating feel, taste, flavor and nutrition compared with conventional aseptic rices and allows eating as it is, without heating, in the period of several months after production.SOLUTION: An aseptic rice is produced by using rice having a sub-aleurone cell layer left on the outer surface and has a yellowness of 8.9-15.0, measured with a spectral colorimeter SE-2000, a moisture content of 63.5-71.3%, measured with a type MX-50 moisture meter and a hardness at ordinary temperature of 75 or lower, measured with TENSIPRESSER MyBoy 2 SYSTEM, even two months after production. |
