PROBLEM TO BE SOLVED: To provide a method of drying a honeycomb structural body capable of preventing an irradiation process of microwaves from being complicated, and improving production efficiency by reducing the time required by a coating process of a coating material.SOLUTION: A method of drying a honeycomb structural body includes at least: an extrusion forming process; and an irradiation process of irradiating a honeycomb structural body with microwaves. The extrusion forming process performs extrusion processing treatment, and includes at least: a coating process of coating at least corners and each side of a surface of an extruded honeycomb raw material with a coating material; a cutting process of cutting the extruded honeycomb raw material in a parallel direction to the honeycomb surface; and a coating process of coating the corners and each side of the honeycomb surface appeared by cutting with the coating material.
