Summary:PROBLEM TO BE SOLVED: To provide a nondestructive analysis method of triacylglycerol contained in a single grain of brown rice.SOLUTION: A regression formula for quantifying triacylglycerol contained in brown rice is obtained by a method including processes (1) to (3) below, and triacylglycerol contained in the brown rice is quantified by using the obtained regression formula and near-infrared spectral data of brown rice to be tested in a wavelength region used in creating the regression formula. (1) Process of measuring near-infrared spectrum of brown rice. (2) Process of quantifying triacylglycerol content of the brown rice. (3) Process of analyzing spectral data obtained in all or a partial wavelength region of a wavelength range in which near-infrared spectrum has been measured, and the determined triacylglycerol content by a PLS (partial least squares) regression analysis, and determining a factor related to the triacylglycerol content.
