Summary:PROBLEM TO BE SOLVED: To provide a method for producing hesperidin, which obtains hesperidin by an efficient process in a high yield. SOLUTION: The method for producing hesperidin includes bringing a citrus fruit into contact with a solvent composed of either or both of water and an organic solvent and performing an extraction treatment while irradiating with a microwave to give an extract (extraction treatment step) and removing a solid component contained in the extract to obtain a clear extract containing hesperidin (hesperidin acquisition step). The amount of the solvent used is 6-25 pts.mass based on 1 pt.mass of the citrus fruit and the extraction temperature is 110-190°C. The extract is cooled to give hesperidin crystal.
