Summary:PROBLEM TO BE SOLVED: To provide a method for treating edible cactus by which grassy smell of the skin of edible cactus is masked and the edible cactus is inhibited from getting brown: to provide edible cactus treated by the method: and to provide food to which the edible cactus is added.SOLUTION: The method for treating edible cactus includes: a masking step S3 for bringing the edible cactus into contact with aqueous cyclodextrin solution to enclose smell components causing the grassy smell of the edible cactus so as to mask and improve the grassy smell of the edible cactus; and a browned color-inhibiting step S2 for effectively inhibiting browning of the edible cactus by bringing the edible cactus into contact with organic acid salt aqueous solution.
