Summary:PROBLEM TO BE SOLVED: To provide a fine particle-like food which encapsulates functional peptides with an edible base material to prevent the hydrolysis of the functional peptides with digestive enzymes and can be swallowed without being chewed. SOLUTION: This method for producing microcapsule fine particles having an average diameter of 10 to 300 μm and encapsulating the functional peptides therein is characterized by including a process for simultaneously extruding a functional peptide solution and a capsule material solution from the tip of a coaxial multiple tube fine nozzle and dropping the extruded solutions in a fine particle-forming medium, wherein the nozzle comprises a plurality of coaxial tubes; the inner diameters of the innermost tube and the outermost tube at the tip of the nozzle are 25 to 400 μm and 80 to 500 μm, respectively; the functional peptide solution is supplied to the more inner tube than the tube into which the capsule material solution is supplied; and the capsule material solution is supplied to the more outer tube than the tube into which the functional peptide solution is supplied.
